Fern 2011 is a bottle conditioned cider made with mixed apples – Bittersweet form Upleadon, Bramley type apples were collected from Brockworth, Sharps form Brockworth, Eaters form Cheltenham, Mixed from Kingsway, mixed from Tuffley. The apples were collected between the 26th August & 28th Aug 2011, scratted using a sterilised ryobi garden shredder and pressed using a homemade press.
The original gravity was 1052, the final gravity was 1.002 making the alcohol content by volume 7.1% (calculator) (inc .5% for priming sugar)
The cider was bottle conditioned on the 8th July, with the addition of 5g of golden caster sugar. Other than this 5g of sugar, there have been no additional ingredients (no added yeast, added sugars or sweeteners, no added water), it is made with 100% pure apple juice and only 5g of sugar per bottle to bottle condition.
28 bottles were made, which will be ready for drinking after the 5th August 2012.
In addition to these bottles, 23l of unconditioned Fern was put in a keg, and 23l of uncondtioned sweetened Fern were put in a second keg (1:4 sweetness).
